People forget that Pau Gasol was the franchise player in Memphis for many years. They had 3 consecutive seasons of 45+ wins with Gasol as the only all-star caliber player.
Pau Gasol provides the defense Boozer cannot, which makes him more valuable as a 2nd option. The height of Gasol also allows him to play Center position if necessary. This gives Gasol more versatility and adaptability to suit a 2nd option.
As good as Boozer is, and with him most likely being a superior rebounder, I would take Gasol because of defense and height.
