Roasted Chipotle Salsa Dry-roasting vegetables on a flat, heavy pan called a comal tames the sharper flavors and adds a smoky dimension (you can also use a heavy frying pan). Chipotle chiles?canned smoked jalapenos?add even further depth of flavor. This salsa is a great alternative for dipping chips or garnishing tacos, tamales, or enchiladas. 2 cloves garlic, unpeeled 1 small red onion, unpeeled, cut into quarters 4 firm-ripe red tomatoes 1 canned chipotle in adobo 1/2 cup fresh cilantro leaves 1 lime, juiced 2 tablespoons vegetable oil Salt Place a comal or a cast-iron skillet over medium-high heat; do not oil. Place garlic, onion, and tomato (all with their skins) in pan and roast, turning, as needed, with tongs, until blistered and charred all over. Let vegetables cool slightly, then peel off skins. In a blender, combine vegetables with chipotle chile and cilantro leaves. Whirl until coarsely pureed. (If using a mortar and pestle, finely chop cilantro leaves with cooked, peeled onion and garlic. Mash tomatoes and chipotle in mortar, then stir in chopped vegetables and cilantro). Squeeze lime juice into salsa, then stir in oil. Taste, season with salt, and serve. Can be made ahead, covered, and refrigerated up to 3 days.

SMOKED CHILE-CILANTRO SAUCE 2 poblanos, smoked, peeled and seeded 1/4 cup red onion, coarsely chopped 2 tablespoons fresh lime juice 3/4 cup olive oil 1/4 cup spinach leaves 1/4 cup cilantro leaves 2 teaspoons honey Salt and freshly ground pepper In a blender, combine the poblanos, onion and lime juice and blend until smooth. While the blender is running, add the oil slowly until emulsified. Add the spinach and cilantro and blend until smooth. Add the honey and season to taste with salt and pepper. Serve at room temperature.

Perfectly Grilled Radicchio 4 heads radicchio 12 garlic cloves, minced 2 teaspoons crushed red pepper flakes 3 tablespoons fresh thyme leaves 2 cups extra-virgin olive oil 1/2 cup balsamic vinegar 1 pound mozzarella, cut into 16 pieces Salt and freshly ground black pepper Cut the radicchio in quarters lengthwise, being sure to keep some of the stem attached to each quarter. Trim off any dark bits of stem. Submerge the radicchio quarters in ice water for 1 hour to remove some bitterness. Put a plate on top of the radicchio to keep them under water. In a medium bowl, combine all ingredients except the mozzarella. Mix well. Prepare a hot fire in your grill, or heat a cast iron grill pan over medium-high heat. Drain the radicchio and place them on paper towels to absorb remaining water. Open up the leaves and spoon the olive oil mixture inside. Place the radicchio quarters on a baking sheet and pour the remaining marinade mixture. Season generously with salt and pepper. Grill the radicchio until browned on the outside but still raw in the center, 3 to 5 minutes, turning occasionally. Be careful, as the oil mixture may flame up. When the radicchio begins to brown, pull from the grill, open up a section of each portion and place a slice of mozzarella inside. Place quarters back onto the sheet pan and place the pan directly on the grill for 5 minutes to melt the cheese. Drizzle any leftover dressing over the top of the grilled radicchio and serve warm. If making radicchio in advance: Before the party, have the radicchio drained and marinated in the vinaigrette in the refrigerator.

Dumpy's Award-Winning* Chocolate Brownies
There are two schools of thought when it comes to brownies: Some like their brownies soft and fluffy, like cake, and some like their browies hard and sweet, like fudge. My opinion: Eat some ****ing cake if that is what you want. For the rest of us, here is the recipe for Dumpy's brownies. *Yes, this recipe won a brownie-baking contest. Ingredients 2 oz. unsweetened chocolate 2 oz. semi-sweet chocolate or 1/3 cup semi-sweet chocolate chips 1/2 cup butter or margarine 1 cup sugar 2 eggs 1 tsp vanilla 1/2 cup all-purpose flour Preheat oven to 350 degrees F. Lightly grease and flour an 8-inch square baking pan. In a medium-size heavy-bottom sauce-pan or double-boiler, melt the chocolates and butter over low heat, stirring until smooth. Remove from the heat and stir in the sugar. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and flour, mixing until blended. Spoon into the prepared pan. [optional: sprinkle the top liberally with chocolate chips]. Bake for about 25 minutes, or until the top feels dry and looks shiny. The inside will be soft, but will firm up when cold. Cool completely in the pan on a rack, then cut into squares. [Optional: If this recipe is too fudge-like for your tastes, you can experiment by adding more flour] Enjoy!

Muffaletta Salad 1 cup mixed cracked good quality olives, coarsely chopped 2 cups giardiniera salad (pickled cauliflower, hot peppers and carrots), drained 5 to 6 ribs celery from the heart, chopped 1/4 cup soft sun-dried tomatoes, chopped 1 fresh green bell pepper, seeded and chopped 1/2 red onion, chopped 1/2 pound stick salami, diced 1/2 pound thick cut ham, chopped 1/2 pound provolone, chopped 3 tablespoons red wine vinegar 1/4 cup extra-virgin olive oil, eyeball it Salt and pepper Combine olives, giardiniera, celery, sun-dried tomatoes, pepper, onion, salami, ham, and provolone. Dress with vinegar and olive oil, season with salt and pepper and let stand a few minutes before serving
