Well I know for one thing you have to have imageready or animation shop, or something similiar. From there, I'm guessing you just save or download the videos, and chop up what you want. But Ed would be better to ask.

Well, you have to save the video first. http://javimoya.com/blog/youtube_en.php
Then you have to convert it to .avi. You can use a 3GP converter.
Then you have to convert it to .gif. Here's a trial I haven't tried yet. If its not good, google "avi gif converter"

I cant find anything to convert wmv's to gifs because avi doesnt get done right

That's pretty much it!
Since you are wanting to work with the row res stuff on youtube, I would recommend using a little freeware from eRightSoft called SUPER. The company/product website is http://www.erightsoft.com/SUPER.html#Dnload
This is a freeware, and there are no watermarks, but the quality is far from the "greatest." You cannot pick and choose frames to capture, etc... If you want good quality, you actually want to go the slow route and "frame capture" via a .flv player, capture each frame at 2x the original size, import them all into ImageReady, then crop and resize.
For avatar purposes, I think the eRightSoft one is good enough.
