My favorite ever has to be the Dream Shake. Others in the top are the Sky Hook, MJ's fadaway, the Stockton-Malone pick-and-role, and Shaq's elbow to the face. Tim-bug's crossover is deadly. I like Karl Malone and Tim Duncan turning around and knocking down the 18 footer in your face. And anything that Booger Smith ever did!
